Delaying the Castle and I am a Champion!

Sorry life has been busy with lots of growing up to do. I've picked up chess and loving it. I play with my dad and he kept on telling me to delay castling but my chess coach tells me to do deploy my pieces and quick castle. I've yet to succeed to beat dad with this strategy - what am I doing wrong? On the brighter side, I've won two medals thus far! Here's me with CC and my medal.
